Maple Blueberry Muffins

Ingredients
  • 1 3/4 Cup All Purpose Flower
  • 1/3 Cup Wheat Germ
  • 1/3 Cup Maple sugar
  • 1 Tbsp Baking Powder
  • 1 1/2 tsp Grated Lemon Rind
  • 1/2 tsp Salt
  • 1 Egg
  • 1/4 Cup Oil
  • 1 Cup Milk
  • 1 Cup Fresh Blueberries Frozen must be drained well
Instructions
  1. Combine flour, wheat germ, Maple Sugar, baking powder, lemon rind and salt and Blend thoroughly

  2. In a small bowl, beat egg, oil and milk and add ingredients to the first mixture and barely stir

  3. Fold in the Blueberries

  4. Fill the muffin papers in your muffin pan or greased muffin tins 2/3 full

  5. Bake at 400° for 25 minutes

  6. Sprinkle the tops of warm muffins with grated Maple Sugar
